Savory Ground Chicken Skillet Recipe

Ingredients:

  • 1 lb ground chicken (or turkey)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper**, diced (any color)
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp chili powder (adjust to taste)
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp tomato paste
  • ½ cup chicken broth
  • Salt & black pepper to taste
  • Optional add-ins:
    • 1 cup spinach (stirred in at the end)
    • ½ cup corn or black beans
    • 1 tbsp lime juice + cilantro for freshness

Instructions:

  1. Sauté Aromatics:
    • Heat oil in a large skillet over medium heat. Add onion, bell pepper, and garlic. Cook 3-4 mins until soft.
  2. Cook Chicken:
    • Add ground chicken, breaking it apart with a spatula. Cook 5-6 mins until no longer pink.
  3. Season:
    • Stir in cumin, paprika, chili powder, soy sauce, tomato paste, and broth. Simmer 3-4 mins until slightly thickened.
  4. Finish & Serve:
    • Taste and adjust salt/pepper. Add spinach (if using) and wilt 1 min.
